I would like to know if there is a way to disable Remote Desktop from keeping
the last user and system logged into information

As far as keeping the last user name from being saved you might try
*enabling* the following group policy...

Local Computer Policy -> Computer Configuration -> Windows Settings ->
Security Settings -> Local Policies -> Security Options -> Interactive
logon: Do not display last user name.

To do that go to "Start -> Run" and type gpedit.msc at the command line.

I removed the entry, however when system restarted and I launched Remote
Desktop my last entry was still there.
