We have a new person in the office that has his laptop configured to log in
to his other network running sbs2k with their own domain.We have a simple p2p
network. He wants touse the laptop in both environments. If we create a
second Admin user on the laptop and configure it for the p2p network, will it
affect his settings for the sbs network/logins.

Look at using NetSwitcher...

You don't need to do anything, really - or install any third party software.
He can log into the domain on the laptop (using cached credentials) and then
connect to any resources on your network he wishes, if he provides the
appropriate credentials. For example :

net use x: \\computer1\share /user:computer1\username <enter>
