Installing new router...do I uninstall the old?

Replacing my 802.11b with a 802.11g.

Do I just unplug the old, install the new software and then plug-in the
new one?  Is it necessary the delete the old router software from the PC
first?

Just reinstalling should be fine. Although, if there are utilities that have
been installed on your PC for the old router, I would delete them.
